Forgeting the harness and just splicing and dicing!

I can't find a wire harness for my Buick Regal 93 two door car. Well actually they have the standard one's that cover GM from 88-92 from Best Buy but they do not fit. Everywhere I go its the same harness. Can I not just cut the plugs and splice the wires directly to the cd stereo I am putting in? Do you guys think its safe? Secondly, I lost my sony cables which are a 16 pin, does it matter if it is a sony 16 pin I buy from any store or should I contact Sony for a replacement.
